Hilton Colombo’s chefs emerge 1st runners-up at Bocuse d’Or Sri Lanka finals

Hilton Colombo’s young and talented Chef Kumarasiri Rohana and his Apprentice Vinura De Silva secured the 1st runners up positions at the recently concluded Bocuse d’ Or Sri Lankan finals where 19 culinary teams comprising of Chef and Apprentice took part in the competition. The winner will take part in the Asia finals which will be held in Shanghai in 2014. With over 15 years of experience at the Hilton Colombo, Kumarasiri Rohana has already achieved many goals during his culinary journey. Having successfully completed the two year kitchen apprentice program Rohana has won two gold medals previously in the Culinary Art competition held in 2011 and 20l2. His Apprentice Vinura De Silva having completed his studies at St. Thomas College, Mt. Lavinia is presently working as an Apprentice at the Hilton Colombo and have successfully completed Industrial Training and Certificate level course in professional cookery at the Sri Lanka Institute of Tourism and Hotel Management. The duo took part in the Bocuse d’ Or competition for the first time. Together they created a menu: Truffle and chicken wrapped loin of lamb and slow cooked lamb rack, crusted with fresh mint, corn crackers and bacon accompanied with Dilmah Earl Grey tea jus along with 3 garnishes; Asparagus stack filled Lamb rump braised with tomato pronto, foie gras, topped with consommé dome with apple puree, Cinnamon infused butternut pumpkin roulade filled with green pea and braised lamb rump croquet with feta and pistachio, Sri Lankan baby egg plant filled curried barley hinted with coconut milk, pineapple and chilli moju, quail egg hopper on Sri Lankan herb mix dusted snake gourd. World renowned Paul Bocuse, a French Chef based in Lyon is famous for the quality of his restaurants using his innovative imagination when it comes to food is also known as the God Father of the Culinary world. He has given many young chefs opportunities through his Bocuse d Or competitions. Bocuse d’Or has been regarded as the most prestigious award for chefs in the world. Hilton Colombo’s Buddika Samarsekera and his Apprentice; Rashen, won the Boscuse d’Or Competition, Sri Lanka 2012 and won bronze at the Asian finals qualifying him as the only Sri Lankan Chef to participate in the Grand World Finals in Lyon this year competing with 23 chefs from around the globe.
