Having worked in the personal kitchens of the Prime Minister of Bahrain and the Head of the State Umm in Dubai, Chef Sunanda has been party to the chefs who catered when entertaining royalty, in the respective countries. This experience and exposure he brings with him to Cinnamon Grand’s Arabic Corner where he will serve up the most traditional of dishes.
The menu offers Middle Eastern starters such as hummus, mouatabel, muhammara, warak enab, fattouch salad, labneh and Arabic mezzeh, to name a few, with soups such as shorbat adas, harira soup and tomato shorba.
Chef Sunanda can also cook up a delicious Arabic mixed grill, shish kebab, samak mashwi (grilled hamour fish fillet), dajaj mashwi (grilled chicken), dawood basha (marinated beef balls stew cooked in savoury tomato and onion sauce with vermicelli rice), laham and okra stew, chicken shawarma or macaroni béchamel.
His desserts, such as omm ali, mahallabiya, baklava, basbousa, cream caramel and kataif, offers the perfect way to end a truly typical Arabic meal.
