American Chef Indika’s All -American Thanksgiving at MLH

North and South America’s best flavors come together (with a few Spanish accents) in Chef Indika’s menu, centred around a glorious turducken and sweet potatoes topped with chorizo and corn hash.

Chef Indika at Mount Lavinia Hotel who is now known as the “The American Chef in Sri Lanka” has been influenced by the Celebrity Chef Marcus Samuelsson at Washington Square in the US, his stint at Ecuadorian American Chef Jose Garces’ Nuevo Latino restaurant: El Vez (both in Philadelphia), Chef David Felton at the Pluckemin Inn in New Jersey, gives him the edge over others to bring to Sri Lanka an authentic American Thanksgiving on 25 November 2010 for Rs. 2,950 nett for dinner.

Indika’s Thanksgiving menu reflects his background as well as the culinary focus of his forte of cooking and indeed his influence from the US. Thanksgiving is Indika’s favourite holiday, and his expertise will be ignited on the 26th of Nov at the Governor’s restaurant. There’s deep-fried turkey and a potluck of side dishes that reflect the diverse cultures in his cookings and the American delectables that make Thanksgiving the most thankful of times.

On Thanksgiving Day, Indika starts the meal with Fall Spice Pumpkin Soup that’s Chef Indika’s favourite. Chef Indika won’t compete with other food outlets buttery mashed potatoes, so he re-imagines and makes an herbed mashed potato and to top it off a chorizo and corn hash.

American and South American traditions: Whole roasted turkey and brussels sprouts with pancetta shared the table with green bean casserole and sage and sausage stuffing.  Indika prefers to incorporate Latin-American and Spanish ingredients into his recipes.
