Indonesian cuisine is a diverse and delightful blend of the indigenous culinary traditions of over 6,000 islands, with influence from India, the Middle East, China and Europe. While rice occupies the epicenter, the infusion of spices lends a divine touch to the vegetables, curried meats and seafood. A choice of appetizers, soups, salads and desserts will titillate even the most discerning palate. Following the success of the World Spice Festival since 2005, Sri Lanka Tourist Development authority once again come together to present World Spice Festival 2011 to showcase the culinary expertise from around the world.
Sri Lanka’s Heritage in Hospitality The Galle Face Hotel (GFH), Colombo will showcase an array of sensational cuisine of Indonesia with ever popular satay’s from 31 October to 08 November at the 1864 fine dining restaurant during dinner.
Executive Chef Budi Hariyanto of Echoes Boutique Hotels The Edge Uluwatu in BALI will be specially flown in for the Spice Festival 2011. Chef Hariyanto from Bali together with Galle Face Hotel’s Executive Chef Rasika will prepare the traditional Indonesian delicacies during the Sensational Indonesian Food Fare at the GFH.
The set menu will include a variety of appetizers, soups, salads, mains and delightful desserts during dinner time at the 1864.
The dinner menu will feature appetizers such as ‘Tahu kunir buncis – turmeric tofu and bean, ‘Tuna tabur isen –tuna marinated in galangal, ‘tempe lapis sayur’- bean cake sandwiches, poached prawn on sweet purple potato and many more. Soups like ‘Jukut Gedang Bali - green papaya broth , ‘Gulai Udang’ – spicy stewed prawn, ‘sup tahu telor’, soto ayam – chicken broth, red bean soup and sour vegetable and plum broth will be on the cards too.
The extensive dinner spread will also include a variety of mains like ‘Ikan Dabu Dabu’ – red snapper with chili salsa, ‘Sapi Ketumbar’ – stewed beef and coriander, ‘Ayam sambel matah’ – shredded chicken with Balinese salsa, ‘bebek madu dan mangga’ – honey duck breast, ‘satay lilit udang’ – prawn satay with lemon grass, ‘tongseng kambing’ – braised lamb and braised lobster and an array of delicious Indonesian desserts at the 1864 fine dining restaurant during the Indonesian Food Fare.
