What do you get when you cross a delicious Italian pizza with the typical Sri Lankan rotti? A Rotizza. Haven’t tried one before? Head over to Cinnamon Red’s rooftop bar Cloud red for these mouth watering dough-based creations that are sure to leave you swooning for more!
Combining what anyone would essentially wish for when thinking of good pizza – charred crust, chewy dough and the topping that is just right, not too thick yet not too slight – with this jazzed up rotti is a creation of Cinnamon Red Executive Chef Sachindra Gamage. Fusing two popular food items in an innovative twist, rotizza draws inspiration from a much loved Italian dish and a local favourite into a one-of-a-kind food experience.
According to Chef Gamage, the idea behind rotizza was developed when he was researching the possibility of introducing new flavours of pizzas to the trendy Cinnamon Red. “I wanted to come up with different styles of pizza to suit the cool and hip vibe of Cinnamon Red. After much culinary ‘trials’ rotizza was voted as the favourite by the ‘tasting panels’,” Chef Gamage said, adding, “I am very glad that this was a hit from day one! The demand is very high, given its enticing spicy and sweet blend; which complements with any concoction served at Cloud red.”
The rotizza is made out of a wheat flour based dough, generally filled with Sri Lankan (seeni sambol and cheese) and Indian (tandoori chicken and cheese) stuffing although it comes in other variations as well. What is unique is that the dough is kneaded like a rotti and cooked using a panini grill. It comes folded with the filling in the middle. To ensure that there is just the right crunch with every bite, it is grilled again. Filling variations also include caramelised onion and cheese, mushroom and cheese, kung pao chicken and ginger beef.
Rotizza is only available at Cloud Red which is open from 5 p.m. to midnight.
