Amaranthé Bay mixing Christmas cake

Christmas comes once a year. It is the time for making merry for the young and the old alike. Baking Christmas cake is something associated with the event and enjoyed by all.

As in the previous years, guests and the staff of Amaranthé Bay Resort & Spa, that sits in a secluded corner at the edge of the slow meandering Pillaikulam Aru and the warm Indian Ocean, gathered during the weekend to engage in an activity they had been waiting for many months.

The staff had a table full of cake ingredients. Among them were raisins, sultanas, currents, cherries, candied peels, cranberries, prunes, figs and nuts of every description. 

Then they arranged all the ingredients in the shape of jolly old Santa complete with a red cap. 

Having feasted eyes with their artistic creation, all joined to mix the ingredients with orange juice, brandy, sherry, rum and numerous other ingredients known only to the Amaranthé Chef. The mixing was a joyous occasion for the guests, who would depart the shores of Sri Lanka before the cake goes in to the oven, after being left for some time to set. 

There will be new Christmas revellers at Amaranthé Bay come Christmas day, who would joyfully savour the cake mixed in November!

Amaranthé Bay is alive to the news that Trincomalee would come alive during Christmas time. 

This year, the Government has decided to celebrate Christmas in the port city of Trincomalee at a location close to Amaranthé Bay and that event will see diplomats based in Colombo, members of the Cabinet, government officials and others rubbing shoulders with numerous visitors to Trincomalee from abroad. 

They will be joined by Sri Lankan expatriates, who would visit the island with their families to enjoy a well-earned vacation. It looks like Trincomalee would be a fun place to be during Christmas time.
