Botanik Rooftop Bistro & Bar located on the rooftop of Fairway Colombo; collaborates with Colombo Supper Club yet again to present Chef Alex Sanchez of Americano; Mumbai’s hottest new restaurant featuring California inspired cuisine on 4 and 5 March.

The Americano takeover will be the sixth installment of the takeover series which began in early 2018. Situated strategically in the center of Colombo’s business and historic district; Botanik offers unparalleled views, eclectic cuisine, articulate design and always an affable ambiance to all its patrons.

The popup is being hosted in collaboration with Naserah Tyebally of the Colombo Supper Club, who managed to entice and educate the palettes of Sri Lanka with up to 16 pop-up dinners across two years, showing appreciation for and exposing a variety of cultures around the world.

With over 10 popups by Colombo Supper Club and five popups by Botanik, the combined synergy between the two likeminded brands has created an exclusive repeat following and clientele looking for a value added food and beverage experience.  Americano is a vibrant neighborhood restaurant by Chef Alex Sanchez and Mallyeka Watsa, serving California Cuisine. Nestled in a by-lane of Kala Ghoda, Americano is warm and minimally designed, offering simple yet refined dishes that highlight Chef Alex’s less-is-more approach to ingredient-driven cuisine. A sophisticated bar program built around house-made tinctures, bitters, and liqueurs reflects the ethos of the kitchen, creating a synergy between Americano’s food and beverage.

Alex is celebrated for his refined approachable cooking and his commitment to quality. Trained under culinary luminaries David Kinch (Manresa, 3-Star Michelin), Daniel Hum, (Eleven Madison Park, 3-Star Michelin) Micheal Mina (2-Star Michelin) and Roland Passot (La Foile, 1-Star Michelin) and an honours graduate of the prestigious culinary institute of America. Alex made his mark over a seven-year stint at The Table, Mumbai’s most popular fine dining destination, winning awards for ‘Best Chef In India’ and ‘Best Restaurant in India.

The event will be held during the course of two nights and will offer limited seating to the eager food and beverage aficionados of Colombo to experience a truly authentic experience in terms of a sit down dinner which is meant to be shared.  This takeover is possible thanks to the efforts of Lanka Premium Beverages who will be curating the beverage experience aspect of the event, Fairway Hotel Colombo. A special thanks also go out to the Pop Ups Fashion and Jewellery partners Hugo Boss and Careem’s Jewelers.
